You know when there’s science involved, you’re going to get some damn good spirits. Banks and Bloom Distillery + Lab is the delicious brainchild of winemakers, hospitality professionals and scientists, with the results being multi-award-winning and flavour-forward.
Banks and Bloom combine cutting-edge innovations and traditional distilling methods to extract pure clarity of flavour from classic botanicals and native ingredients.
The team boasts an impressive line-up of handcrafted spirits to make any cocktail aficionado weak at the knees. From their velvety smooth gins and vodkas to their botanical and fresh ready-to-drinks (we’re getting thirsty just thinking about it). But don’t just take our word for it. The team blitzed it recently with the highly acclaimed double gold medal at both the San Francisco World Spirits Awards and the Singapore World Spirits Competition for their premium Ice Vodka. The team were also recently awarded The Masters Medal for their signature Gin at the USA-based SIP awards. Think of it as the Oscars in the spirits world, a huge achievement especially as Banks and Bloom Distillery + Lab is a small WA distillery in its first year of operation.
At Cabin Fever, we’re big believers in taste testing and we can confirm, Banks and Bloom is as tasty as their bottles and cans are beautiful. Earlier this month, guests of our Perth Launch got to sample the Banks and Bloom Distillery + Lab Signature Gin Negroni and boy was she exceptional. It’s bold, with hints of fruit, just the way we like it. You’ll be able to taste it at participating venues across the Cabin Fever program (read on below for where), or recreate for yourself with the recipe we managed to steal from the team!
Recreate The Banks and Bloom Distillery + Lab Signature Gin Negroni
In a rocks glass over plenty of ice, pour
- 30ml Banks & Bloom Gin
- 30ml Campari
- 30ml Sweet Vermouth Rosso (we recommend Ochota Barrels Botanicals Vermouth – South Australia)
- 1 barspoon of Crème de More (we use Marionette, its mulberry rich flavours give it an extra depth)
Stir to mix and garnish with orange & blackberry.

Gather in the company of some of WA’s best bartenders for the ultimate negroni battle. Lining up for the great clash is Luca Baioni (Banks and Bloom Distillery), David Stucken (Terrarium Kitchen + Bar), Billy Phillips (Rhum Burgundy) and Elise Goodwin (Wild in the Street Fremantle and 2023 Bartender of the Year – WA Good Food Guide). Each marker will produce two creations plus a twist on the classic negroni resulting in the night’s ultimate cocktail menu. Prize packs to be won throughout the evening.

Become a master mixologist with the Banks and Bloom – Distillery + Lab cocktail workshop. Shake and stir up a storm under the guidance of Banks and Bloom – Distillery + Lab Mixologist Luca, crafting three unique cocktails with Australian native garnishes. Take home two exclusive Banks and Bloom RTDs, including the refreshing Vodka Soda + Desert Lime and the fruity Gin Soda + Passionfruit.
The Ultimate Winter Long Lunch
An exciting many hands collab lunch championing local produce with four renowned chefs preparing a course each. Be wined and dined by Chef Rishi Naleendra of Michelin-starred Cloudstreet Singapore, who will be joined by Evan Hayter of Arimia, Calum MacKechnie of Lalla Rookh and Luke Foyle from Juanita’s Bar Subiaco. Each a master of their preferred cuisines and will be preparing a course each championing local produce, matched with Banks & Bloom cocktails, Vasse Felix wine and Shelter beer.
