Each day, after filleting and processing the freshly delivered seafood, fish heads, guts and other excess is provided to local chefs to repurpose for fish stock, as well as to their next-door neighbours, Marine Solutions WA. This Cabin Fever, we want to shine the spotlight on four West Australian sustainable fisheries that work hand in hand with Endeavour Foods. From the pristine waters of the Exmouth Gulf, travelling through the gorgeous Abrolhos, passing through Wedge Island, all the way south to Albany, these sustainable fisheries supply Endeavour Foods with some of the best ocean produce in the world. Here’s four seafood brands you can keep an eye out for across Cabin Fever menus and beyond, so you can be sure what’s hitting your plate not only tastes top notch, but is responsibility sourced too!
Exmouth Gulf Prawn Fishery:
MSC-certified* since 2015, this fishery is renowned for its commitment to sustainable fishing. A certification that underscores adherence to stringent sustainable practices, including seasonal fishing restrictions, comprehensive pre-season surveys, and strict catch limits, all designed to preserve the health of prawn populations in the region. The Exmouth Gulf Prawn Fishers’ prawns, including Tiger and King varieties, are snap frozen at sea to ensure they retain their superior quality and freshness. This process guarantees that chefs and consumers enjoy the finest seafood product, with sustainability at its core.

Abrolhos Island and Mid-West Scallop Fishery:
As the first Australian scallop fishery to receive the MSC certification, their commitment to sustainable practices can be seen in the careful management of the catch, ensuring scallops are harvested at an optimal size and reproductive condition and maximising meat quality while maintaining the ecosystem’s health. Their Saucer Scallops are celebrated for their rich flavour and pristine quality, snap-frozen soon after harvest to lock in their exquisite taste.

Wedge Island Octopus:
Owen, a dedicated fisherman from Wedge Island Fishing, consistently delivers his freshly caught Wedge Island Octopus to Endeavour Foods. Upon arrival, the octopus is immediately processed and packaged, available to customers as a snap frozen product, ensuring consistent quality and availability until his next catch comes in. Wedge Island Octopus is celebrated globally for its exceptional flavour, characterised by its pristine white flesh that is ideal for various culinary methods. As a proud contributor to the Western Australia Octopus Fishery, this octopus is part of a fishery that has been awarded MSC certification for its sustainable practices, which support the robust octopus’ populations along the Western Australian coastline.

Albany Sardines:
Harvested by the Westerberg family with a legacy dating back to the early 1900s, continuing to sustainably harvest sardines off the great southern coast of WA. Renowned for their rich flavour, these sardines are a testament to the pristine waters of Albany. Following their catch, the sardines are promptly landed, processed, and frozen within three hours, a practice that guarantees the preservation of their premium quality. This swift process from ocean to freeze ensures that the sardines maintain their freshness and nutritional value, making them a sought-after product for both local and international markets.
