Si Vintners x Fervor – Fri 18 & Sat 19 July
Step into the candlelit barrel hall at Si Vintners for a night (or lunch) of wild wines, grounded flavours, and stories that stir the soul. Paul Iskov and his roaming Fervor crew team up with Iwo and Sarah from Si for a 5-course sensory feast that celebrates the region in its rawest, most delicious form. De’sendent x LS Merchants

Cult cabernets. Umami-rich everything. Secret courses. This one’s for the food nerds and wine obsessives. LS Merchants opens their vault of rare and new releases, including a vertical tasting of Joliffe Cabernet, while Chef Evan Hayter (of de’sendent) delivers a multi-course menu that flexes seasonality, creativity, and a little renegade chaos. Weird and wonderful never tasted so good. Xanadu is cracking open the cellar to pour unexpected varietals and curious gems, each paired with a dish by Chef Andrea Gasparini, who blends local ingredients with Italian soul. Woodlands Wines x Eight Willows Retreat – Thursday 24 July
Big bottles, bold flavours. Chef Will Gaunt serves up a seasonal, paddock-to-plate feast by candlelight, paired with serious pours from 1.5L, 3L and 6L magnums of Woodlands’ finest. Normal Van’s Rob Webster and Brendan Pratt from Busselton Pavilion bring the burgers, bites, and cheeky twists to a five-course feast that turns cheat-day classics into culinary showstoppers.
